I recently visited New Mexico and I saw something called a sopapilla on the menu at a lot of restaurants. I was afraid to try it, but now am curious. Did I miss out on something good?
A sopapilla is the comfort food of New Mexico - okay, well, one of the comfort foods. It is a square piece of pastry dough that is deep fried. Once it comes up to temp it puffs out into a pocket.
To eat, many people like to tear the corner off, drizzle honey inside - I recommend going to the flea market and purchasing local honey - and then devour. Yes, the honey will drip on your chin, and probably your shirt or blouse, but, man... it is ohh so good.
Make sure you have a sopapilla the next time you go.
